We add a head of garlic to every pot of beans we make, peeled and tossed in as whole cloves. To keep up with this habit, we’ve always grown a lot of garlic, and have started offering it alongside our beans. One pound of garlic includes approximately 5–7 heads in a mix of varieties: Chesnok Red, a beautiful hardneck purple striped garlic; Spanish Roja, a hardneck Rocambole with hefty cloves; and Blossom, a slightly smaller and punchier variety with evenly sized cloves for easy peeling.
